Vegan Gluten-free Chocolate Chip Cookies

The holidays are upon us and that means baked goodies galore. Baked goodies filled with butter, eggs, cream, and gluten… Of course, all of that is delicious but if for personal health reasons, or allergies not everyone can have all that. My daughter has a dairy allergy and my husband doesn’t do gluten so I created this dairy free, egg free, gluten free chocolate chip cookie recipe so that everyone could join in the fun of holiday yums! Unlike a lot of allergy friendly recipes, these are actually very very good and so soft 😋 Not to mention SO easy to make.

  • 1/2 Cup Earth Balance “butter” (this is also sold in stick form which is great for baking)
  • 1/4 Cup organic cane sugar
  • 1/2 Cup organic light brown sugar
  • 1 1/2 Cups Bob’s Red Mill gluten free flour
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
  • 1 tablespoon water
  • 2 tablespoons olive oil
  • 1 Cup Enjoy Life chocolate chips

pre-heat oven to 350

Whisk together “butter” and sugars

• Mix in flour and baking soda

• Add vanilla, water, and oil

• Fold in chocolate chips

• Roll into balls and place on a cookie sheet

• Bake 12-15 minutes

When you remove the cookies from the oven they will need to set for a few minutes as they are very fluffy and soft and don’t flatten out like other cookies. My family loves these chocolate chip cookies and I hope ya’ll do as well. If you make them, let me know in the comments below!

Happy Baking!
